I'd be interested to see more into how much farther some of these parks can go in food innovation. The ordering/serving/order tracking technology at the Six Flags parks is what I would like to see improved next. I can't tell you the amount of times I've been somewhere like Tom+Chee or Rivertown Potato Works and could not understand what order was being served. Put an order number on each receipt (make sure each customer takes their receipt) and have a screen showing order status at these dining locations, and that would solve most of the issues. Mobile ordering should also be (re)implemented across some of the dining locations in each park.
